I've heard the examples like Celtic Woman's cover version of "Somewhere Over The Rainbow". Can you tell me what others have I heard?

I don't think I understand your question. Do you mean what other songs to they harmonize in? Or what other songs to they sing acapella?

"Somewhere" from West Side Story was the other completely acapella number that the group did.  "Have  Yourself a Merry Little Christmas" was mostly acapella.  The very beginning of "The Voice" has very little instrumentation.  Are those the types of things/information you are looking for?
